This Method Champenoise Sparkling Chardonnay is handmade in the true French style for us by Greg Gallagher, one of Australia’s leading sparkling wine makers. Kept on  yeast lees for 8 year it  has aged beautifully : complex and rich but still crisp and dry, pale gold in colour,  a fine bead and persistent mousse, and is bursting with aromas of freshly baked bread. A palate of citrus, green apple and nougat is beautifully balanced by mouth-filling creaminess and a very persistent finish. Drink at special  celebrations, as a sophisticated aperitif, or the perfect complement to oysters and seafood.
